Vegetarian pasta recipe
This recipe will give you some insight on an issue that we don’t think too much when shopping for food: biodiversity! So in our recipe of today, we won’t be using just pasta, but spelt pasta which is basically a different kind of wheat.
Here is the recipe: Spelt pasta with savoy cabbage.
Ingredients for 4 people:
- 300g of penne pasta
- 1 small savoy cabbage
- 4 carrots
- 1 garlic wedge
- 1 zucchini
- 1 scallion
- 1 table spoon of cumin seeds
- 1/2 white wine
- 40g of smoked scamorza cheese
- extra virgin olive oil, salt and pepper
Cut in slices the savoy cabbage, Cut the carrots in thin slices as well and cut in cubes the zucchini. Chop the scallion.
In a pan add some oil to slowly cook the garlic, add the cumin seed and let them cook for a couple of seconds. Add hence the scallion, the savoy cabbage, the carrots and the zucchini.
Wash with the white wine and keep cooking by mixing everything in the pan so that it doesn’t stick to the surface or burn. Add salt and pepper and let it cook for other 5 minutes.
On the side put a pot with some water, when the water is boiling add salt and the pasta. When the pasta is cooked (you can read the exact minutes it needs on the packaging or just taste it) add the pasta to the pan together with the cut scamorza cheese. Mix for a couple of minutes and you are ready to serve
