Delicious Post Holidays Detox Recipe

Holidays, and Christmas Holidays in particular, can be a nightmare for our regular diet. So coming back to normality, everyone feels the need of some light meals to detox and get back in shape. Here is a recipe for you for a vegetarian leek quiche.

Ingredients for 6 people:

- 1 table spoon of extra virgin olive oil (you could also use maybe hemp seeds oil if you wish)
- 30g of butter (or ghee)
- 1 kg of leeks
- 2 or 3 table spoons of flour
- 150ml of fresh cream (if you want to make your recipe vegan, you can use vegetarian cream)
- salt and pepper
- muscat nut
- 2 rols of puff pastry
- 1 egg
- 1 table spoon of water

Turn on the owen at 200 degrees C. Heat the butter and the olive oil in a pan and cook gently the leeks till they are soft.
Taking the pan away from the fire add the flour and mix gently.
Start cooking again the mix of leeks and flowers by slowing adding the cream.
Add salt, pepper and the muscat nut.
Cook till everything is at the desired density. Then take away from fire and let it cool aside.

Now to the puff pastry. You can either make it yourself or buy it ready to use. If you want to make it yourself, you can have a look at the following recipe: http://www.bbcgoodfood.com/recipes/2403/roughpuff-pastry- . It is quick and you can have a light flaky pastry in minutes.

Take the first roll of pastry, knead gently and form into a smooth rectangle.

Spread the leaks and leave about 2 cm each side of the rectangle. Brush the sides of the pastry with the egg.

Take the second roll of pastry and cut it in stripes of about 1,5 cm each. Use the stripes to cover the leeks.

Brush everything with the egg that is left and cook everything in the owen for 30 minutes till the pastry is golden and crunchy.

You can add some parsley and tomato to garnish everything at the end. And here is the final result:
