Filled up peppers: a veggie, easy and quick recipe

Another quick and easy recipe for those of you in need of a veg idea every now and again :)

Here are the ingredients for 4 people:

- 1 green pepper

- 1 red pepper

- 3 Red tomatoes

- 4 artichokes (we are going to use only the heart)

- 2 garlic wedges, sliced.

- 100 g of black kalamata olives

- 20 g of capers

- 100 g of greek feta cheese

- Some bread crumble

- Basil leaves

- Extra virgin olive oil.

Heat the owen at 190 degrees Celsius.

Create a compost with the olives, the tomatos chopped in small pieces, the artichokes, the capers, the feta cheese chopped in pieces, the garlic, add some salt, pepper and olive oil and mix it up with the bread crumble.

Cut the peppers in half and throw away all the seeds. Then place them on a own pan and fill the shelves up with the compost you have just prepared.

Let everything cook for half an hour in the owen and add the basil leaves to garnish it up. And here is the final result:

Easy! Quick! Veggie!! :)
